Located in the community of San Agustín Etla, Oaxaca, formerly called LOOHVANA (a place where beans abound), at an altitude of approximately 1,600 MSNM, with good rainfall, warm and cool temperatures that result in excellent conditions for the production of our organic vegetables.


With the Zero Waste philosophy, our raw materials are used in a functional way: we collect rainwater to irrigate crops, we conserve resources through the responsible production, consumption and recovery of packaging and materials without burning and without being dumped on the ground, water or air that threaten the environment or public health.

Since 2002 we carry the Slow Food banner , an international movement that aims to offer  good, clean and fair food. These are guiding principles that we put into practice every day at Los Danzantes and for two years in the orchard.


Thanks to the work carried out, we managed to obtain quality vegetables that are taken to the restaurant and to the  Selva Oaxaca Cocktail Bar , located in the center of Oaxaca de Juárez, places where the importance of consuming local products, of knowing to the people behind the ingredient and why it is still essential to generate spaces for dialogue about new ways of eating healthy and organic products.
