LOS DANZANTES — THE MEXICAN GASTRONOMIC RITUAL

At Los Danzantes we work to update Mexican gastronomy, invigorate traditional flavors, and demonstrate that the roots of our cuisine can be successfully reinterpreted in modern ways.  We offer a memorable, and environmentally-conscientious, responsible and sustainable Mexican gastronomic experience.

We opened in December of 2001 with the goal of presenting traditional Mexican Cuisine with novel combinations and forms, striving to maintain its essence in concert with a process of continual evolution. To bring together research and experimentation with flavors, textures and processes, all the while maintaining a requisite balance between the cutting-edge and the traditional.

At Los Danzantes we transform the act of eating into a gastronomic ritual, in which—from start to finish—there permeates care and attention to detail, so that our guests might find sustenance, flavor and enjoyment in the Danzantes experience.

To dine at Los Danzantes is like attending a theatrical performance, in which the principal protagonist, the Danzante—an intermediary between the mundane and the divine, in the form of a ritual dancer—accompanies us in a gastronomic Ritual; takes us by the hand on a journey which pays homage to our history, retelling and awakening emotions through the flavor of his dance. In this Ritual, the Danzante takes us from the earthly (food, atmosphere, design) to the heavenly (pleasure), creating unforgettable experiences which delight the senses and enrich our memories.

Over the years Los Danzantes has received awards and been recognized internationally. Recently, we received a 2024 Michelin Star for the excellent quality of our cuisine and service, as well as a Michelin Green Star in recognition of our commitment to the environment and its sustainability. We have also been recognized with the Mexican Gastronomic Sustainability Prize, awarded by the Culinaria Mexicana organization to socially responsible businesses in the socio-economic sphere.  

OUR GARDEN, SUSTAINABILITY AND SLOW FOOD

At the heart of our gastronomic philosophy lies the Los Danzantes Garden, where we cultivate fresh, organic ingredients which bring life to each of our dishes. The Garden is a tribute to local traditional agricultural practices and a demonstration of our commitment to sustainability.

Our Garden is located in the community of San Agustín Etla, known in the past as Loohvana (‘the land where beans abound’), at an altitude of approximately 1,600 meters above sea level, with good annual precipitation and a cool and temperate climate. These conditions are excellent for the production of our organic crops.

Our raw materials are used functionally: organic waste that we generate in our restaurant is sent to the Los Danzantes Garden for composting; we capture rainwater there to irrigate our plants; and we conserve  resources through the responsible acquisition, use and disposition of packaging and other materials, never burning them or allowing them to come in contact with the earth, water or air, which might threaten the environment and public health.   

Our commitment to social responsibility is characterized by cooperative relationships, such as our donation of decommissioned glassware to the artisanal Xaquixe glass workshop, which uses it to make glasses, pitchers, bottles and other works of art. In addition, we send the used oil from our kitchen to the same workshop, which it uses as fuel for its renewable-energy furnaces. In this way we have been adhering to a Zero Waste policy, eliminating almost entirely our use of plastics.
