Just a few minutes from the city, in San Agustín Etla—formerly known as Loohvana—we grow the organic ingredients that bring an essential part of our cuisine to life at an elevation of 1,600 meters above sea level. In this landscape of mild climate and fertile soil, the garden is the living heart of our philosophy: a space where planting, tending, and harvesting intertwine with memory, seasonality, and respect for the environment.
Every sprout, every flower, and every compost pile express a mindful approach to gastronomy. Here, regenerative agriculture, responsible use of resources, and a close connection to the source are part of our daily practice. We compost organic waste, collect rainwater, and reuse materials, cultivating not only food but also a more attentive relationship with the earth.
Our culinary and educational experiences invite you to delve into this cycle. Throughout the tour, our team members share the work and care that make each ingredient possible, revealing the origin of the dishes from an intimate and vivid perspective. It is an invitation to reconnect with the natural processes that sustain the kitchen and to discover the story behind every flavor.
The visit culminates in a communal meal: a six-course tasting menu with drinks included, conceived as a celebration of what the earth offers when we listen to it attentively.
